Equipment

  • KitchenAid Mixer
  • Kitchen Scale

Ingredients

  • 100 g Sourdough Discard
  • 250 g Water warm
  • 525 g All Purpose Flour
  • 6 g Salt
  • 75 g Butter melted or softened
  • 7 g Active Yeast

Instructions

  • Combine warm water, active yeast and sugar in the bowl of your stand mixer or other bowl. Wait until the top becomes foamy, about 5 minutes.
  • While you wait add your flour and salt to a separate mixing bowl. Mix those 2 until combined.
  • Add sourdough discard and butter to the foamy mix. This is a good time to add honey if you want it a little sweeter. Mix the ingredients.
  • Add flour to the mixing bowl and mix it all together using your dough hook. Dough is ready when it is no longer sticking to the sides of the bowl or to your finger. If it is sticky add a little bit of flour until your reach the right consistency.
  • While its mixing grease a bowl with oil and once the dough is ready transfer the ball of dough to the bowl and cover. The dough should double in size within 2 hours.
  • While waiting grease your loaf pan!
  • After the dough has doubled, give it a light punch to remove the air. Ease the dough out of the bowl unto a lightly greased countertop. From there you will shape the dough. Flatten it out to the width of your pan and make sure the dough has the same thickness across the entire length of it. Roll it into a log and pinch the seams together. Place seam down in your loaf pan. Cover again.
  • Preheat oven to 350℉. Once the dough has risen right above the top of the pan it is time to bake. Should take about 1 hour for this 2nd rise.
  • Now that it is ready, bake for 35 minutes or until until golden brown. Be sure your oven has enough room for the bread to rise.
  • Remove bread from oven and immediately remove bread from pan unto a wire rack.
  • Let the bread cool and enjoy!
